Service Charge vs Tips in the UAE: What Actually Reaches Your Staff

Guests assume the service charge is the tip. Staff know it usually is not. Here is how the two differ and how to run tipping alongside a service charge without confusing anyone.

A tip card on a restaurant table

Ask ten guests in a Dubai restaurant what the 10% service charge on their bill is for, and most will tell you it is the tip. Ask ten servers whether they see it, and the answer is usually no.

What a service charge is

A service charge is a percentage the venue adds to the bill. It is revenue for the business. Some venues distribute part of it; many do not, and there is no obligation to. It appears on the bill before VAT and is charged whether or not the guest thought about it.

What a tip is

A tip is a voluntary payment from a guest to a person, decided after the service, in an amount the guest chooses. That is the whole difference, and it is the part guests actually care about: they want the money to reach the person who looked after them.

Running both without confusing the guest

  • Keep them visually separate — the service charge on the bill, the tip on a card or a stand
  • Name the recipient — a page with a person's name on it removes any ambiguity about where the money goes
  • Do not pre-fill a tip amount on top of a service charge; let the guest choose
  • Tell your staff exactly what happens to the service charge, so they can answer honestly if asked

Pooled versus direct

Direct tipping — the guest picks a named server — is the fairest reflection of what the guest experienced, and it is what most front-of-house staff prefer. Pooled tipping spreads income to the kitchen and to roles the guest never meets, which many operators consider fairer overall.

Both are legitimate. What matters is that the policy is written down, explained to staff, and applied consistently — and that whichever you pick, the money is traceable to a page rather than to a cash box.
